As we announced in our Newsletter this month, we have started a private FB group called “Confident Natural Beauty – Powered by True North Beauty” and invited you to join! This group is a place where women can come together to ask questions, share ideas, get feedback, learn new things, and uplift each other. We will also post TNB news there and ask for your feedback on ideas for upcoming promotions and new product launches! Another special thing about the group is that we have a few women who are contributing to the group and today we are featuring one of them in this blog post! (P.S. One segment we have on our page is called #HippieGourmet.That segment is run by Pam, a nurse by day and foodie by night. Pam lives in the beautiful panhandle of Florida with her husband and enjoys bike rides, and long air-conditioned road trips along the shore with her dogs Jax and Jemma. She shares healthy eating/living habits and tips with the group and recipes. Today we are going to feature one of her amazing healthy fall dishes that is perfect for a chilly day or a Halloween dinner party!
Pumpkin Turkey Chili
1 Tbsp vegetable oil
1 cup chopped onion
2 cups green chili peppers (Hatch green chilis)
2 cups frozen corn
½ cup chopped yellow bell pepper
1 clove garlic, minced
1 lb ground turkey
1 can (14.5 oz) diced tomatoes
2 cups pumpkin puree
1 ½ Tbsp chili powder
½ tsp black pepper
1 pinch of salt
½ cup shredded Cheddar cheese
½ cup sour cream
Toss green chili peppers, onion, frozen corn kernels, and yellow pepper with vegetable oil and chili powder in a bowl. Line a baking sheet with tin foil and spread out vegetables. Roast at 400 degrees until vegetables are slightly charred, about 15-20 minutes.
While vegetables are roasting, in a large skillet over medium heat, cook the ground turkey until evenly brown. Once browned, drain excess oil and moisture from turkey and add in minced garlic, tomatoes, and pumpkin. Stir until combined, then add in your roasted vegetables. Season with salt and pepper to taste and additional chili powder as needed. Reduce heat to low, cover, and simmer 20 minutes. Serve topped with Cheddar cheese and sour cream.
